Yummy Meatloaf

I don’t know why, when I was a kid I didn’t like meatloaf.  After all, it’s just a hamburger without a bun.  Maybe, it was the name; maybe it was the way the cafeteria lunch lady made it (my mom didn’t make meat loaf).  What ever it was, sadly, I missed out.  Today, as a slightly more mature person, I love meat loaf (and so does my family).   So, today I give you my classic meatloaf.

In a bowl: mix hamburger, ½ cup of oats, 1 egg, pepper, garlic powder, Worcestershire sauce, and ketchup.  Mix only to combine.  Don’t over mix, as the meat will become tough (not mean, just not tender).

Form into a loaf shape, I like a free form loaf shape myself but using a loaf pan is totally expectable.

Top meatloaf with a mixture of ketchup, brown sugar and mustard for that extra zing.

Cover with foil.  Bake at 350 degrees for 55 minutes.  Uncover meatloaf and bake for an additional 12 minutes to crisp up the top a bit.

A tender and delicious meatloaf.
Ingredients
  • 2 Lb hamburger
  • ½ cup oats
  • 1 egg
  • 1 teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon Worcestershire
  • ¼ cup ketchup
  • cooking spray
  • Topping
  • ¼ cup ketchup
  • 3 tablespoons brown sugar
  • 1 teaspoon mustard
Instructions
  1. Preheat oven to 375 degrees.
  2. Place first 7 (seven) ingredients in a large bowl and combine. Do not over mix or the meat will become tough.
  3. Spay pan with cooking spray.
  4. Shape meat mixture into a loaf shape.
  5. Combine ketchup, brown sugar and mustard.
  6. Spread ketchup mixture over the top of the meat loaf.
  7. Cover pan with foil and bake for 45 minutes.
  8. Remove foil and continue baking for 10 minutes.
  9. Let meatloaf rest for 5 minutes prior to serving.
