For the past few week-ends, I have been wanting waffles. For one reason or another I keep forgetting to start the yeast batter the night before. Deciding to forgo my stand by recipe and try something new, I scoured the internet (Food Network) and found a recipe titled “Waffles of insane Greatness”, recipe courtesy of Aretha Frankensteins of Chattanooga, TN. With a name like that, it better be a great waffle, and it was! These melt in your mouth waffles have just the perfect amount of crisp on the outside and fluffy tenderness on the inside and an added bonus, they come together very quickly. Judging by the way my family downed these, I have a feeling, these waffles are going to be a sunday morning favorite.
Ingredients
3/4 cup all purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup whole milk or buttermilk (I used a combo of both)
1/3 cup vegetable oil
1 egg
1 1/2 teaspoon sugar
3/4 teaspoon vanilla extract
Blueberries
Powder Sugar
Warm maple syurp
1. Preheat waffle iron.
2. In a medium bowl, combine flour, cornstarch, baking powder, baking soda,, and salt; mix to combine. Add milk(s), vegetable oil, egg, sugar and vanilla to dry mixture and combine. Let batter stand for 30 minutes.
3. Pour batter into waffle iron according to your waffle makers instructions.
4. Once waffle are done, top with warm maple syrup, blueberries and powdered sugar.
