My daughter Nina loves Tomato Basil Bisque.  During Fall and Winter she requests it often {about once a week}.  I usually purchase it at an upscale grocery store, in their deli department where they have delicious prepared foods.  Their tomato basil bisque tastes wonderful but, it’s really expensive, and 1 container does not feed the entire family.

Cut to me having coffee with a friend..We were talking about our daughter’s {as we usually do} and she told me how she has her daughter cook dinner one night a week.  I thought this was a wonderful idea and I should implement it in my own household.  With 2 daughters that means 2 nights off a week!. Yay!  By the way, they also grocery shop for their ingredients, prepare, cook and clean up.  Score.

Back to Nina, she decided to tackle the tomato basil bisque on her second week, and this is her recipe. Everyone in the family loved it.  Guess that upscale store will have one less person buying their tomato basil bisque.  I must tell you, I think it’s better than the one I purchase.

Ingredients

1 can tomato puree, 29 oz

1 can whole tomatoes, 28 oz

1 container of chicken broth, 32 oz

3 tablespoons sugar

3 shakes of tabasco

1 tablespoon garlic powder

1 tablespoon black pepper

6 leaves of fresh basil, roughly chopped

3 tablespoons butter

1 1/4 cup half & half

Crusty Bread for dipping {optional}

 

1. Place first 8 ingredients in a large pot over medium heat.

2. Simmer for 45 minutes

3. Add butter and stir until butter melts completely

4. Add half and half

5. Using a immersion blender or a stand up blender, blend until smooth

6. Simmer bisque for an additional 1/12 hours, stirring every 10 to 15 minutes
