The other day I was walking up and down the isle at Trader Joe’s, filling my cart with all the delectable wonderful items Trader Joe’s carries. I just love going there, I always come home with delicious goodies! Did you know they have an app now? How cool is that?
Anyways…
Whenever I get home from the grocery store I always unload all my purchased items onto the kitchen table and put the items away from there. Its just my way of inventorying my supplies.
I noticed I had purchased both Trader Joe’s Speculoos Cookies and Speculoos Crunchy Cookie Butter {without even realizing it when I was in the store}, and then the thought came to me…Speculoos Ice Cream! Oh My! Why haven’t I thought about this before?
I like crunchy ice cream. The kind that has chuncks of whatever the flavor is, so when I decided to make this Speculoos Ice Cream I wanted the cookies chunks to be just that, good size chunks and I wanted the Cookie Butter to be rippling through the ice cream, not mixed throughout.
- 1 cup whole milk
- 1 cup heavy cream
- 17 oz condensed milk
- ¾ cup granulated sugar
- 2 teaspoons pure vanilla extract
- 12 Speculous Cookies, crushed into chunks
- ½ cup Speculous Crunchy Cookie Butter, slightly melted
- In a medium bowl combine the milk, heavy cream, condensed milk, sugar, and vanilla.
- Whisk to combine and until granulated sugar is dissolved.
- Turn your ice cream maker on and pour in the milk mixture.
- After ice cream is made, but before you take it out of the machine pour in the cookie chunks and let the machine incorporate the cookies with the ice cream.
- Scoop about a ⅓ of the ice cream into a freezer safe container.
- Melt cookie butter in a microwave save container {I used a glass measuring cup} for 25 seconds, depending upon your microwave.
- Top with a ⅓ of the softened cookie butter. Repeat with remaining ice cream and cookie butter.
- Freeze for 2 hours.
Enjoy this Speculoos Ice Cream!

The cookies are addictive, so I didn’t open them until it was time to make the ice cream…and the cookie butter, a spoon is all that’s needed to enjoy it!
