If you have ever looked at Pinterest, chances are you have seen these adorable Mini Lasagna Cups, pinned. They always look so yummy, and I have wanted to make them for a while.
I finally had all the ingredients in my fridge at the same time, so today was the day. I had left over marinara from last nights dinner. I bought won ton wrappers and ricotta last time I went to the grocery store. Everything was aligned.
They were really quite simple.
Here’s how I did it.
Ingredients
Homemade Marinara recipe here or use your favorite Jar marinara sauce
Ricotta, 16 oz
1 cup shredded mozzarella cheese
48 wonton wrappers
1 tablespoon parsley
1 tablespoon garlic powder
24 basil leves
olive oil
Directions
1. Preheat oven to 375 degrees. Spray mini muffin tin with cooking spray.
2. Mix ricotta with parsley and garlic powder.
3. Brush both sides of 1 wonton wrapper with a light coat of olive oil. Place wonton in muffin tin cup.
4. Add a small spoonful of ricotta in wonton topped with small spoonful of marinara, top with basil leaf.
5. Top with another wonton brushed with olive oil {both sides}. Add a small spoonful of marinara topped with mozzarella to cover.
6. Repeat that process for 23 more cups.
7. Bake for 18-20 minutes.
I put them in every other tin, just so they don’t crowd each other.
The beauty about these babies is that you can add anything you like to them, ground beef, ground turkey, sausage or parmesan. The possibilities are endless.
