Guacamole, for the unofficial beginning of summer weekend

Isn’t it funny how our tastes change, as we get older?  There was so many things as a child I didn’t eat.  I look back and realize I cheated myself out of so much good food (But rest assured, I am making up for it now!).  Although, I did and still love to eat anchovies on pizza, it’s my favorite topping. I know, I know, I’m weird.  Luckily, I married a man who has the same taste in pizza toppings as I do.

I love avocados…now.  I love, love, love guacamole!  I can eat it on anything.  When I was growing up, I hated them.  My Nonna had two avocado trees in her back yard, and I remember my mom would make a ton of dishes with avocados. I would love to have access to an avocado tree now.  I recently saw a post on Pinterest that says you could freeze avocados, new to me. Next time I have several avocados, I am going to give it a try and let you know how it turns out, the problem is, I will probably always end up eating them.

Here is what I made instead of trying to freeze them…

Yummy Guacamole

Ingredients:

4 ripe Hass avocados ~ diced

¼ cup red onion ~ diced finely

1/2 lime ~ zest

½ lime juice

¼ cup cilantro ~ chopped finely

Tabasco ~ 4 dashes

1 teaspoon sea salt

¼ teaspoon cayenne pepper

Directions:

Placed diced avocado in a bowl and smash with a fork, add red onion, cilantro, salt, cayenne pepper and Tabasco along with the juice and zest (zest lime while it is still whole) from ½ a lime.  Mix together just to combine.

Serve with tortilla chips.
