Sunday morning, I made french toast for breakfast and for some reason I had more than the usually amount of left over egg mixture. Then, I had this crazy thought! Why not make a french toast sandwich for lunch?!?!

French Toast Sandwich

Ingredients
- Classic French Toast Recipe
- 2 slices of Texas toast style bread {or what ever bread you prefer}
- 3-4 slices, thinly cut roasted turkey
- 3-4 slices, thinly cut roast beef
- 2 slices pepper jack cheese
- ½ a sliced avocado
- 1 tablespoons apricot jam {or what ever you prefer}
- 2 tablespoons butter
Instructions
- Make the egg mixture using the Classic french Toast recipe. Set aside.
- On one side of bread place the sliced avocado, turkey, cheese, and roast beef.
- On the second slice of bread, spread the apricot.
- Place the apricot side of the bread down onto of the roast beef.
- In a large skillet melt the butter over medium heat.
- Dip the whole sandwich into the egg mixture.
- Place the dipped sandwich on the buttered skillet and cook until there is a golden brown crust, about 3 minutes.
- Flip the sandwich over and cook until golden brown.
