Sunday morning, I made french toast for breakfast and for some reason I had more than the usually amount of left over egg mixture.  Then, I had this crazy thought!  Why not make a french toast sandwich for lunch?!?!

French Toast Sandwich

Ingredients
  • Classic French Toast Recipe
  • 2 slices of Texas toast style bread {or what ever bread you prefer}
  • 3-4 slices, thinly cut roasted turkey
  • 3-4 slices, thinly cut roast beef
  • 2 slices pepper jack cheese
  • ½ a sliced avocado
  • 1 tablespoons apricot jam {or what ever you prefer}
  • 2 tablespoons butter
Instructions
  1. Make the egg mixture using the Classic french Toast recipe. Set aside.
  2. On one side of bread place the sliced avocado, turkey, cheese, and roast beef.
  3. On the second slice of bread, spread the apricot.
  4. Place the apricot side of the bread down onto of the roast beef.
  5. In a large skillet melt the butter over medium heat.
  6. Dip the whole sandwich into the egg mixture.
  7. Place the dipped sandwich on the buttered skillet and cook until there is a golden brown crust, about 3 minutes.
  8. Flip the sandwich over and cook until golden brown.
