Two of my favorite things, chocolate and muffins. The thought of a creative way to be able to have chocolate for breakfast! Wow!
Chocolate chip muffins.
I’ve been trying different chocolate chip muffin recipes for some time adding this and that, and could never get the texture right, until now. I got it, finally! I hope you enjoy these moist, tender muffins as much as I do.
Creaming together butter, sugar and sour cream.
Adding in chocolate chips
I like to use pieces of square cut parchment paper to line the muffin tins.
Ingredients
1/2 cup of butter: very slightly melted in the microwave
1 cup sugar
2 large eggs
1/4 cup sour cream
1 teaspoon vanilla
2 teaspoons baking powder
1/4 teaspoon salt
2 cups all-purpose flour
1/2 cup milk
1 1/2 cup mini chocolate chips
Directions
Preheat oven to 375 degrees
In a mixer, add butter, sugar and sour cream. Mix to combine
Add one egg at a time until completely incorporated
Beat in vanilla, baking powder and salt until combined
Alternate flour and milk, end with flour
Stir in chocolate chips
Spoon muffin mixture in to muffin tin filling each 3/4. Sprinkle extra chocolate chips on top
Bake between 15 to 20 minutes, depending upon your oven.
Bake until a tooth pick comes out clean
