Caramel Peanut Clusters

These Caramel Peanut Clusters have to be the easiest candy in the world to make!  Really, I mean it!  If you’re looking for a homemade hostess gift to bring to that holiday party you are going to, bring these {homemade is always better}.  Or, if you just want something chocolatey, crunchy, gooey, and just down right delicious, you need to make these.

They are so delicious and only take 4 ingredients to make.  3 if you only want to use 1 color of chocolate!

Here is just how easy these caramel peanut clusters are to make…

Caramel Peanut Clusters

Make mounds of salted peanuts (or any nut you would like) onto parchment paper or a silpat.

Place the unwrapped caramel in a microwave safe bowl and microwave until completely melted and creamy, spoon caramel over peanuts.  Place in fridge until the caramel has hardened.

Melt chocolate the same way as you did the caramel’s and spoon melted chocolate over  the peanuts covering the caramel and peanuts completely.

Melt the white chocolate the same as above and using a spoon sprinkle it over the chocolate.  Wait for the white chocolate to dry completely.

Ingredients
  • 2 cups salted cocktail peanuts
  • ½ cup unwrapped caramel
  • 1½ cup chocolate chips
  • ½ cup white chocolate chips
Instructions
  1. Place peanuts in small mounds onto baking sheet lined with a silpat or parchment paper.
  2. Melt caramel in a microwave safe bowl. Microwave for 1 minute, then stir. Continue to put caramel in the microwave at 30 second intervals until the caramel are completely melted.
  3. Spoon a ½ teasoon of melted caramel over each peanut mound. Let cool in the fridge about 15 minutes.
  4. Melt the chocolate chips the same as the caramel, until completely melted. Spoon the melted chocolate completely covering the peanut and caramel mounds.
  5. Let cool and harden completely on the counter top for about an hour depending on the temperature in your home {if you place in the fridge is might discolor the chocolate}.
  6. Once the chocolate is cool microwave the white chocolate chips {the same as above} until completely melted. Using a spoon decorate the top of the caramel peanut clusters.
Notes
Sometimes the bottom of the clusters become sticky because of the caramel. If this happens, before decorating with the white chocolate turn the clusters over and add some melted chocolate to the bottom sealing the caramel in. Do this once the top chocolate has hardened.
