Do you remember when I made these Homemade Cheese Crackers with @RealCaliforniaCheese?  If you do then you remember me talking about a campaign that the wonderful people at Real California Cheese have going on to help the victims of hurricanes Harvey & Irma.  Since I last spoke about this campaign wildfires raged through parts of California, so this campaign will also help those who were affected.

Now for the Breakfast Quesadilla

What can I say about a delightful breakfast quesadilla?  They make a delicious breakfast, but it also makes a yummy lunch or dinner!

Use what ever ingredients you have on hand.

I like to stuff a lot of cheese and bacon in mine.

Breakfast Quesadilla

Ingredients
  • 4 slices of bacon
  • 4 eggs
  • ¼ cup of milk
  • ½ teaspoon butter
  • salt and pepper to taste
  • 2 tablespoons cilantro, chopped (optional)
  • 6 oz cheddar cheese, shredded
  • 6 medium size tortillas
  • **Serve with Sour Cream & Salsa
Instructions
  1. Cut bacon into small pieces.
  2. Heat a skillet over medium heat, add bacon pieces and cook until crispy. remove from pan and place on to a paper towel, set aside. Remove excess grease from the pan.
  3. In a bowl mix together eggs, milk, salt, and pepper.
  4. Place skillet once again over medium heat. Add butter to skillet and pour the egg mixture. Stir the egg mixture with a rubber spatula, cooking eggs slowly. Once eggs look 95% done remove from the heat. They will continue to cook in the pan.
  5. **To Assemble Quesadilla
  6. Place a tortilla on to a dry heated skillet.
  7. Add a layer of cheese, then egg, then bacon, then cilantro, top off with another layer of cheese and egg then top with a second tortilla.
  8. Flip tortilla making sure the filling stays inside the tortillas and the cheese has melted to your liking.
  9. Slice the tortilla into 4 wedges.
  10. Serve with sour cream and salsa.

    Aw I love that they’re doing this campaign for Hurricane Relief. And these breakfast quesadillas are such a smart idea! I always have tortillas lying around. I think I know what I’m having for breakfast tomorrow

    This looks so tasty! I never would have thought to enjoy a quesadilla for breakfast but now that I’ve seen this recipe it seems like a perfect choice!

    I have done breakfast tacos quite a bit. But I haven’t done a quesadilla just yet, although I think it would be delicious. And it might be another way to get my daughter to eat eggs. Thanks for the great idea.

    Thank you for the reminder of how good breakfast quesadillas are! I used to eat one most days. It was lovely! This one sounds so, so good. I think I need to make one over the weekend. Yum!
