Our local farmers market was over flowing with the sweet, sweet smell of strawberries, and I could not resist buying a full flat. Strawberry season screams summer time, and all the wonderful recipes that include strawberries. I cant wait to make strawberry shortcake with biscuits and ice cream, the strawberry morning smoothies and there is always chocolate covered strawberries for that special someone and the list goes on and on.
I know we have a few weeks to go until it’s officially summer, but I can’t think of anything more yummy than balsamic strawberry salsa, for that perfect sweet surprise! You can use this sweet salsa with chips or as and accompaniment to chicken or pork. Give this balsamic strawberry salsa a try, you’re going to love it!
Ingredients
2 cups chopped strawberries
1 Jalapeno, diced finely with ribs and seeds removed
¼ red onion, finely chopped
¼ cup cilantro, finely chopped
1 lime, juiced
2 tablespoons balsamic vinegar
½ teaspoon sugar (optional, depending on the sweetness of your strawberries)
Combine all ingredients in a bowl. Serve immediately. Use this salsa with chips, on fish, chicken and pork dishes.
